Each variety boasts its unique flavour. However, this winter, it’s not just the usual bhajiyas stealing the spotlight. A viral Instagram video highlights a unique regional twist: Ratalu Bhajiya (purple yam fritters) from Gujarat’s Surat.
The video captures a vendor expertly preparing this delicacy. He begins by peeling a ratalu and slicing it into thin, long purple strips. Next, he prepares a besan (gram flour) batter, adding salt and mixing it by hand. The yam slices are then dipped into the batter and sprinkled with the vendor’s signature “special masala.” They are deep-fried to golden perfection in hot oil. According to the vendor, these bhajiyas are “sweet on the inside, spicy on the outside.” Served with chutney and green chillies, this plate of deliciousness is priced at Rs 300. Take a look:

Since being shared, the video has garnered almost 3 million views on Instagram. “Yum,” a user commented. Another wrote, “Surat: the city of besan & cheese.” Someone noted, “It was good before deep-frying,” while another agreed, saying, “Just don’t fry it.” A comment read, “It’s healthy and nutritious.” A concerned user said, “It looks delicious, but please maintain hygiene; the oil looks very black. Is it just the camera angle?”
